Let them cool for 5 minutes in the muffin tin, then move them to a wire rack to cool all the way through

  • 2 ripe avocados

  • 1/2 pound cooked shrimp, peeled and deveined

  • 1/2 cup diced cucumber

  • 1/4 cup diced red onion

  • 1/4 cup chopped fresh cilantro

  • 1 jalapeo, seeded and minced

  • 1/4 cup ketchup

  • 2 tablespoons fresh lime juice

  • 1 tablespoon hot sauce

  • 1 teaspoon Worcestershire sauce

  • Salt and pepper to taste

  • Tortilla chips for serving

Instructions:

Take the pits out of the avocados and cut them in half


Cut each half in half and scoop out some of the flesh to make a hole for the shrimp cocktail


Chop the red onion, cucumber, cilantro, and jalapeo and put them in a bowl


Add the cooked shrimp


Put the ketchup, fresh lime juice, hot sauce, Worcestershire sauce, salt, and pepper in a different bowl and mix them together


Cover the shrimp mixture with this sauce and toss it around to cover everything


Put a little of the shrimp cocktail mixture into each half of the avocado and gently press it down to make it fit


Chips should be on the side for the stuffed avocados

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a separate bowl, whisk together the flour, baking powder, and salt


Gradually add the dry ingredients to the wet ingredients, mixing until just combined


Scoop spoonfuls of cookie dough and roll them into balls

Use a fork to gently flatten each cookie and create a crisscross pattern on top

Fill the bowl with flour, baking soda, and salt


Don't mix any further than that


Add vegan chocolate chunks and mix well


Put batter into the loaf pan that has been prepared


Put it in the oven and bake for 50 to 60 minutes, or until a toothpick stuck in the middle comes out clean


Cool the banana bread in the pan for 10 minutes before moving it to a wire rack to cool all the way down

Sesame Roasted Salmon BLT with Kimchi Yogurt Dressing

With a tangy and spicy kimchi yogurt dressing, this sandwich takes the richness of sesame-roasted salmon and the classic flavors of a BLT and makes them even better.

Ingredients:

  • 4 salmon fillets

  • 2 tbsp sesame oil

  • Salt and pepper to taste

  • 8 slices of bread

  • 8 slices of bacon

  • 2 tomatoes, sliced

  • 4 cups shredded lettuce

  • 1 cup kimchi

  • 1/2 cup Greek yogurt

  • 2 cloves garlic, minced

  • 1 tsp honey

  • 1 tbsp lime juice

  • 1/4 cup chopped cilantro

  • 1/4 cup chopped scallions

Instructions:

Turn on the oven and heat it up to 400F 200C


Add salt and pepper to the salmon fillets and rub them with the sesame oil


Put them on a baking sheet and roast them for 12 to 15 minutes, or until they are fully cooked


Toast the bread while the salmon is cooking


Cook the bacon in a pan until it gets crispy


Put paper towels down to dry


To make the kimchi yogurt dressing, put the Greek yogurt, honey, lime juice, chopped cilantro, and chopped scallions in a small bowl and mix them together


Spread a lot of the kimchi yogurt dressing on one side of each slice of bread before putting them together


On half of the bread slices, arrange slices of lettuce, tomato, roasted salmon, and bacon


Add the last few slices of bread on top to make sandwiches


Serve the sandwiches right away after cutting them in half
